چکیده

ژلاتین عبارت است از یک پلی پپتید با وزن مولکولی بالا که از کلاژن بافت های پیوندی، پوست، استخوان و تاندون مشتق می شود. متداول ترین منبع تولید ژلاتین در دنیا استخوان گاو و خوک می باشد. ژلاتین از عروس دریایی Crambionella orsini خلیج فارس با موفقیت توسط قلیا استخراج شد. خصوصیات فیزیکوشیمیایی آن مورد بررسی قرار گرفت که ترکیب تقریبی، قدرت ژل، نقطه ژل شدن، نقطه ذوب شدن ژلاتین عروس دریایی بررسی شده است. ژلاتین عروس دریایی شامل 1/13% رطوبت، چربی 3/1٪، 4/2 % خاکستر، 2/78٪ پروتئین است. ژلاتین قدرت ژل 33کیلو پاسکال، نقطه ژل 18درجه سانتی گراد و نقطه ذوب 23درجه سانتی گراد را نشان داد. ژلاتین از زنجیره α1، زنجیره α2 ، زنجیره β و زنجیره γ تشکیل شده بود. ژلاتین عروس دریایی مانند ژلاتین ماهی خواص رئولوژیکی بالاتری نسبت به ژلاتین پستانداران نشان نداد. با این حال، می تواند در محصولات غذایی مختلف و لوازم آرایشی و بهداشتی که نیاز به استحکام ژل بالا ندارند، استفاده شود.
